Chicken is one of the most versatile and affordable meat and it
allow to prepare dishes which are low on fat (if you want) and/or very
palatable. There are several ways we use it at home. Here are some
examples:
Chicken salad: I make this when I have some leftovers of roasted chicken or boiled chicken (clearly the first one is more tasty!) especially if there is some part of the breast. The chicken has not a very strong taste, so you can add it to a salad to make it a complete dish (thanks to the high content in proteins of the chicken meat). Since I'm Italian, my dressing of choice is a good olive oil, but you can use some American-style dressing. I like to add to the salad some herbal spice, like oregano or capers, and some cheese in small cubes. Another possibility is to add anchovies and feta cheese.
Chicken soup recipe: I make this in different ways depending on what I have at hand. I boil the chicken with vegetables (celery, carrots, parsley, tomato, onion) until very tender and I make a soup using this nice smelling broth in which I cut some boiled chicken in very tiny pieces. Sometimes I like to add some boiled potatoes, cut in very little cubes, and sometimes I make a more thick soup using a mixer to dissolve some potatoes in the broth. This is more or less the base, then you can add almost anything you want to the soup, like mushrooms, peas, rice, pasta, pieces of vegetables, and so on.
Chicken wing recipes: I like to fry them once they are coated with a blend of butter, spices and flour. My preferred spices are ground black pepper, garlic, paprika, cayenne pepper, but here you are really free to experiment and follow your inspiration.
Chicken tandoori and chicken tikka masala: In my family we like a lot a touch of Indian spices. Unfortunately to perform at home one of these recipes is not always easy (living in Italy I have some problems in finding all the needed fresh spices). However, you can find some cans of ready mixed spices or even sauce, and all you have to do is to add the chicken meat, marinate if needed, and cook. Using these 'helps' you can easily arrange an exotic dinner for the family.
