If you love Chinese food, then Sesame Chicken must be on the top
of your must have list. I am especially fond of the tangy flavour of the
sauce and crunchy after taste of the roasted sesame seeds that are
splattered all over the chicken. Traditionally this dish is served with
white rice and broccoli, but I know many people like me would want to
skip the broccoli and just go with the delicious chicken.

- 3 whole boneless chicken breasts
- 2 tablespoons Roasted Black Sesame seeds
- 3 1/2 - 4 cups peanut oil for deep-frying
- 2 tablespoons light soy sauce
- 1 tablespoon cooking wine or dry sherry
- a few drops of Sesame oil
- 2 tablespoons flour
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon vegetable oil
- 1/2 cup water
- 1 cup chicken broth
- 1/8 cup vinegar
- 1/4 cup cornstarch
- 1 cup sugar
- 2 tablespoons dark soy sauce
- 2 tablespoons Sesame oil
- 1 tsp chili paste, or more if desired
- 1 clove garlic (minced)
- Dice the chicken breasts into inch sized cubes.
- Take a medium sized bowl and mix all the ingredients of the marinade and marinate the chicken for atleast 2-3 hours. If you are short on time that you can do 15-30 minutes.
- Take another bowl and mix all the ingredients for the sauce. Then pour this mixture into a medium sized wok and bring to a boil, stirring continuously.
- Turn the heat down to low and keep the sauce warm while we will move to now deep-frying the chicken.
- Heat the peanut oil in a wok and start adding the marinated chicken pieces one by one. Keep frying them till they are golden brown. Drain out the excess oil on paper towels.
- Just before you are finished deep-frying, bring the sauce back up to a boil.
- Place the chicken on a large platter and pour the sauce over.
- Sprinkle with Roasted Black Sesame Seeds.
- Serve the Sesame Chicken with your favourite fried or steamed rice
