Tortilla Chicken Recipe With Southern Egg Bread For Dressing

Tortilla Chicken
This easy recipe for kids and parents that the preparation time is 3 minutes and the total cooking time required is 25 minutes

Chicken Recipe

Ingredients
- Can (14-1/2 ounces) DEL MONTE® Stewed Tomatoes - Seasoned with Garlic, Jalapenos, & Mexican Spices
- 1/2 cup chopped onion
- Cloves garlic, crushed
- 1/2 teaspoon dried oregano, crushed
- 1/2 teaspoon chili powder
- 1/2 pound boneless chicken, skinned and cut into strips
- cups tortilla chips
- 3/4 cup shredded Monterey Jack cheese with jalapeƱo peppers or Cheddar cheese
Method

1. Preheat oven to 375 degrees F. Drain tomatoes, reserving liquid, and chop the tomatoes.
2. Combine reserved liquid onion, garlic, oregano and pepper in a large skillet and cook for 5 minutes, stirring occasionally.

Southern Egg Bread For Dressing
- 2 cups cornmeal, self rising
- 1 cup boiling water
- 2 tsp baking powder
- 1 tsp salt
- 2 tsp shortening
- 2 eggs
- 2 1/2 cups buttermilk
Scald the cornmeal with boiling water. Cool. Mix eggs, buttermilk, shortening and baking powder. When cold add cornmeal mixture of milk and blend completely.

Pour into a buttered pan and bake for 25 minutes in moderately hot oven.
