For me, one of the most dreaded questions of the day is "What's
for Dinner?" No one in my family, except me, seems to be concerned until
time to eat, and that's too late to plan, execute, and serve a meal.
After a hard day at work, the quickest dinner is often the best dinner.
As an alternative to the fast food drive-through, stop by your
neighborhood grocer and snap up a rotisserie chicken. Using the
suggestions below, you can serve a good meal with minimum effort.

- The easiest way to serve this chicken is to separate into serving pieces or debone completely, serve with your favorite green salad, potatoes, pasta, or rice and crispy French bread.
- Chicken salad is also a hit. Debone the chicken, cut into bite-sized pieces, add mayonnaise or cream cheese and mix well. Add any of the following--celery, pecans, raisins, grapes, boiled eggs, apples, or any other favorite ingredient. Mix well and serve on a bed of your favorite greens. Add your favorite crackers.
- For a great pasta dish, debone chicken and cut into small pieces. Cook linguine (or your favorite pasta)according to package directions and drain. While pasta is cooking, saute finely chopped onions and minced garlic to taste in small amount of olive oil. When onion and garlic are slightly brown, stir in chicken, pasta, and salt and pepper and mix well. If desired add additional olive oil. Top with fresh grated parmesan cheese and serve with crusty bread, and steamed broccoli.
- If you like Chinese, buy the stir fry vegetables that have the seasoning packs included. Cook vegetables according to package directions. When vegetables are done, add chicken and seasoning packet and heat thoroughly. Serve with rice.
- For a south-of-the-border taste, make burritos, enchiladas, fajitas, and tacos with this tasty fowl. Add shredded rotisserie chicken to salsa, beans, sour cream and cheese; or combine with sauted onions and sweet peppers; with shredded lettuce and chopped tomatoes; or mix with mild green chiles, seasonings, scallions and a can of enchilada sauce. Fill your favorite flour or corn wraps with the chicken mixture and serve with Mexican rice, lettuce and tomato salad with guacamole dressing, or another favorite Mexican side dish.
